As I told during the lessons with Isaac my husband is CEO of a company that among others distributes ingredients for the food market. Besides the distribution they also have a R&D lab to develop all kinds of innovative solutions for the food industry. They have a collaboration with AdalbaPro (worlds first food ingredient line made from insects). I was very lucky to have the opportunity to get two kinds of products from this company to experiment for this practice.
I started off with the protein concentrate and tried to make a simple recipe of flour/sugar/butter and add the protein concentrate as 'flower'

The amount off butter first changed to coconut oil but then it would't bind. Changed to 2 grams of butter and
5 grams of coconut oil. Every cookie gets less regular flour and more 'insect flour' till the recipe is half/half.
The smell is almost unbearable. The taste is horrifying and disgusting! The neighbors test the cookies. Poor them... but thanks for their help!!
By heating the insect protein concentrate the smell reduces and the horrible taste as well. And the color changes.
The reason the substance is 'greasy' and gets a darker color is because of the body fat of the beetle is tied to the protein.

Testing the grounded beetle (the complete larvae :-0). Trough a certain technique this gets a flaky texture, similar as kebab. To give it more 'bite. This product is mostly used for meat replacement. The R&D team of Caldic haven't made anything sweet yet with this product, a nice challenge for me! 
First the sand cookies as I started of with the protein concentrate.

First I had to grind the flakes in a mortar
It tastes great! what a difference with the protein cookies!
I have a conflict, this second cookie is nice and sweet, but there is no reason for adding protein. People who play sports and train hard eat or drink extra protein after their training. Or people who are aware of the earth and what they eat, want to eat healthy food, will consider to eat an protein enriched treat. Therefore a cookie or treat with butter and sugar is not a good option. I want to make a real well-thought-off treat for this group of people. So I started to add different healthy options.
I made a bigger batch of the 2nd recipe. This time with the foodprocessor. The cookies became more firm.
new recipe:

20 gram grounded flakes
40 gram oatmeal flakes
25 gram sunflower seeds
25 gram pumpkin seeds
50 gram peanut butter
20 gram coconutoil
20 gram honey
Line a large baking tray with baking paper. Place all the ingredients in the food processor and mix till a gross dough.

Take a spoon of dough and roll little balls. Putt them on the baking sheet and leave them in the fridge for at least one hour till they're firm.

Preheat the oven to 160 degrees Celsius. Roll 2 tablespoons of mixture into balls and place on the baking tray with non-stick baking paper. Bake for 30 minutes until deep golden. Allow the power balls to cool down before taking them off the tray. Makes 25 balls.
Also grinded the flakes and let them dry in the oven to 55 degrees because the flakes are very moist. Haven't used it yet, but it's more 'floury' this way.
Carrot cake balls with crunchy nuts and a topping of creme cheese and Ricotta.

To bring my products to the teachers i wanted to make a nice package with the resources I had at home.
